Our Christmas holiday was pure perfection filled with family and relaxation. There is something about a gloomy snow filled day that kicks the cozy factor up several notches. It seems that the weather gods have followed us from the mountains back to Denver. Bundled up in our toasty house, watching what seems like a foot of snow fall  ( okay so maybe in reality it’s been about half of that) I couldn’t help but start day dreaming of a warm pot of soup to welcome Gracis home from work today… and for me to nibble on throughout the frigid day!

I was inspired to create this Lime Chicken Tortilla Soup from a new Tex Mex restaurant we visited while in Aspen. I had come down with a terrible case of altitude sickness and just needed something simple to coat my stomach. This soup was just the ticket. I loved how they accomplished a simplicity and lightness of without sacrificing flavor. So I dove into my fridge and came up with my SUPER EASY version. This recipe took me a whole 20 minutes to whip up and made a huge batch which will keep us satisfied throughout the week. I am also toying with the idea of freezing some of the excess for a quick meal on one of those inevitable nights I don’t feel like doing anything other than crawling into bed after work.

Lime Chicken Tortilla Soup 

1 whole roasted chicken – I opted to buy a roasted chicken from the store to save time but you can just as easily pop a chicken in the crockpot the night before you want to make this recipe

4 medium tomatoes

80 ounces ( approximately 2 1/2 large containers) of chicken broth

1/2 cup of cilantro

2 jalapeños – no seeds

3-4 cloves of garlic – depending on how much you like the garlic flavor

1/2 of a sweet onion

1 tsp of Cumin

4 medium avocados – pealed and diced

Mexican Cheese blend for garnish

Sour Cream for Garnish (optional)

Tortilla chips for garnish ( optional )

Salt and Pepper to taste

{Sweating out the Onions, Jalapeños, and Garlic }

Chop the onion, jalapeños, and garlic and place them with a little bit of oil into a large pot. Over low heat, allow the mixture to sweat for about 5 minutes. Add the Chicken broth, chicken, cilantro, and diced tomatoes to the mixture and allow to simmer. Season with 1 tsp Cumin and Salt and Pepper to taste. When it comes time to serve, peel and cube the avocados ( approximately 1/2 of an avocado per bowl ). personally like this soup with a bit more bite, compared to Gracis to likes it a bit on  the tamer side.  For this reason I simply cut and Juice the juice of 1 lime over the serving bowl, but you can make adjustments based on your preferences. Simply garnish with a bit of sour cream and cheese and enjoy! You can also add tortilla chips to give it a more traditional feel, but I personally like this soup super simple.
